Parmesan Chicken & Waldorf Salad

I love the idea of Popcorn chicken although I don't like all the oil that comes along with it. So I decided to come up with my own version with a little parmesan twist. This is great to have as a light lunch or a hearty dinner. Enjoy!






INGREDIENTS

1 chicken breast
1 egg
1 cup panko breadcrumbs (can be found in the Asian aisle of the supermarket)
1/2 cup corn flour (can use tapioca flour)
1/2 cup parmesan cheese
Olive oil spray
2 cups diced apple
1 cup chopped celery
2 Tbsp of plain yoghurt
1/2 cup chopped walnuts or pecans
Squeeze of lemon
Lemon wedges to serve

METHOD
  1. Dice the chicken breast into bite size pieces. 
  2. Crack the egg into a bowl and beat for a few seconds. 
  3. Place the breadcrumbs into a bowl and mix in parmesan cheese. 
  4. Place flour into a bowl.
  5. Coat chicken in flour, then dip in egg and roll in breadcrumb mixture.
  6. Spray a frying pan with olive oil spray and fry chicken until golden brown. Place on some kitchen paper to drain any excess oil. 
  7. For the waldorf salad combine the apple, celery, yoghurt, nuts and lemon in a bowl and stir well. 
  8. To serve place the chicken and salad on a plate and garnish with lemon wedges.
